If Texas even cares for expansion and if they really do want Houston, they will go with four teams and Houston will be on of the last two. There was speculation that BYU and UC would begin next year and Houston and a 4th team would begin in 2018. That may still be the case. Like you, I would prefer UConn over Houston. As the conference stands now, there is no need for another Texas school. However, if UT and TT leave for the SEC, it would make sense to have Houston around. I just can not see anyone wanting to take UT though. Maybe an arrangement like ND has with the ACC, a part-time player/part-time independent. As far as teams potentially leaving, I am not sure the BIG will pick up Kansas. I am not sure anyone will pick up OK State. As I have said before, UConn is more valuable than Kansas and no conference seems to be interested in UConn.
I am starting to believe that there will be zero teams added. All we can worry about is taking care of current business and that means beating Purdue on Saturday.
